Baba ghanoush has a Mediterranean origin and is similar to hummus but is made with grilled/ roasted eggplant instead of chickpeas. Its literal name means “spoiled dad” because it is such a delectable dish you will feel quite spoiled when having it.

Not only is this dish super easy to make but it’s super versatile. You can use it as an appetizer, a side, a dip, or a spread.

Instructions

    In a bowl, add the garlic and lemon juice to the grilled eggplant and stir with a fork.

    Add the tahini to the bowl and stir until it’s completely mixed together.

    While stirring, slowly drizzle in the olive oil. Continue stirring until the mixture is pale and creamy.

    Stir in the parsley, salt, and cumin. Season to taste with more salt and more lemon juice as you like.

    Transfer the baba ghanoush to a serving bowl and lightly drizzle olive oil on top.

    Sprinkle parsley and paprika on top.
